It's all about the guacamole

If you are interested in having The King's Singers rehearse at your home, I have one piece of advice: guacamole.

Honestly, all we need is freshly-made guac and we're anyone's! Well, you know what I mean?!

Everyone's got their favourite combination of ingredients but you can't go past avocado, coriander (cilantro for our US readers), onion, jalapeño (or other chilli), lime juice, salt and tomato (make sure to de-skin and de-seed).

Johnny kindly mixed these ingredients for us yesterday during our rehearsal day at Château Bruerton. You may've seen we were at Nick's on Tuesday and Jules' on Monday. It's a lovely change from on-stage/backstage/somewhere public and gives each of us the chance to play host and display our culinary skills. Nick and Jules' mums can be very proud of their sons' cooking prowess – delicious!

I chose to make a vegetable chilli which is one of my go-to recipes. We each have them. They're great when time is of the essence and we don't want to overcomplicate things. That's not to say that said recipe doesn't require time, effort or skill. Just that we are confident we can make it 'with our eyes closed' (kids, if you're reading this, DON'T try this at home).

You'll have one or two (or many) but I just love the simplicity of chopping veg, adding a homemade combo of spices/herbs and putting it all in a saucepan and leaving it for six hours, stirring occasionally. My one piece of advice is to taste and re-taste, adding things that you deem necessary. Job done!

Looking forward to St Malo this weekend. Trying to remember the last time I was in Brittany. Bring on the crêpes, cider and seafood I say! Hopefully there's an oyster (or twelve) with my name on it, too.
